A Delightful Alternative To Roast An Eggplant
Eggplants are in season in Japan from June through September, so now is the best time to eat them. Zen-Noh has devised a new way to cook this versatile vegetable that is both convenient and delicious.
Instead of frying eggplant in a pan, they recommend grilling it on a hot sandwich grill!
Note: Because this recipe calls for eggplants small enough to fit inside a hot sandwich grill, use eggplants that are tiny enough that when chopped as directed above, you end up with four quarters with skin that fit in the grill.
